Mini pepper poppers


Hi friends!

Anyone else love whipping up something and not following a recipe?! I do! Growing up with my father who is an awesome cook always did that. I’d ask what was in something he made and he couldn’t tell me exactly what he put in it. “A little of this, a little of that”. Over the years, his way of cooking became my way of cooking.

Today I’m sharing a recipe I made for dinner tonight as a side with some steak! Great for an appetizer also! I had some mini sweet peppers, and a block of cream cheese that needed to be used. Well, I love jalapeño poppers so why not try to make them but keto friendly?! Hope you enjoy!

Preheat oven to 450 degrees, then hollow out the peppers.

Next I made the cream cheese stuffing. I warmed the cream cheese in the microwave for about 40 seconds to make it easier to mix everything. Shredded my own cheddar cheese (no carbs vs a bag already shredded for you in the store which has 2 carbs). Minx in some garlic, salt, and pepper. (You could also use a flavored cream cheese such as chive & onion or vegetable garden!)

Next fill each pepper with the cream cheese mix.

And last but not least, BACON! Who doesn’t love bacon?! Keto means bacon everything! I used a half a piece of bacon per pepper. Bake for 20-25 minutes!
